Harissa Spiced Matsutake Mushrooms

Marlene from Gypsy Cove in lower Gibsons kindly gave me some Matsutake mushrooms that she picked in the local forest, and in honour of the 2013 Sunshine Coast Mushroom festival I fried them up and put them over a veggie burger.

Harissa is a North African spicy paste made with roasted chilis, cumin, and caraway. It is a common table condiment in Tunisia, for example, and combined with the Sicilian Lemon Balsamic, it made these mushrooms soar!

Ingredients:
1/2 Matsutake Mushroom, slice thinly (or substitute with other mushrooms)
1 Tablespoon Sunshine Coast Olive Oil Co. Harissa Infused Olive Oil
1 Tablespoon Sunshine Coast Olive Oil Co. Sicilian Lemon Aged White Balsamic
Sunshine Coast Olive Oil Co. Wild Mushroom and Sage Infused Olive Oil (optional)
Recipe:
Heat Harissa Infused Oil in pan.
Add mushrooms and fry 1 minute.
Add Sicilian Lemon Balsamic.
Fry mushrooms until golden on the edges.

For an extra flavour delight, instead of mustard or ketchup, I drizzled Sunshine Coast Olive Oil Co. Wild Mushroom and Sage Infused Olive Oil over my veggie burger. Wow!
