Sometimes, a lettuce fresh from my garden is such a delicious miracle of nature, that i do not want to hide it beneath other vegetables.
This butter lettuce, plucked from my greenhouse in February, was as pretty as a rose.
A delicate vinaigrette was in order!
2 Tablespoons Sunshine Coast Olive Oil Co. Milanese Gremolata Olive Oil
2 Tablespoons Sunshine Coast Olive Oil Co. Sicilian Lemon White Balsamic*
1 teaspoon of a grainy mustard.
1 head butter lettuce
slivers of aged parmesan cheese.
*an excellent substitute is Grapefruit White Balsamic
Whisk first three ingredients until emuslified. Tear up butter lettuce, add dressing and toss until well coated. Top with slivers of parmesan cheese.
