When Matt and I first met, he used to tease me about my love of tofu. In fact, it took a while to convince him that tofu can be delicious. In fact, when a tofu recipe passes his critique, I know that most people would enjoy it. This one fits into that category, and in fact, reminds us both of the spices in KFC chicken, but with healthy ingredients.
Needed for this recipe:
Sunshine Coast Olive Oil Co. Garlic Olive Oil
1 package of firm tofu, chopped into bite-sized cubes
2 Tablespoons Sunshine Coast Olive Oil Co. Garlic Olive Oil
2 Tablespoons Tamari
1/4 cup nutritional yeast flakes (from a health food store)
A sprinkle of salt.
Preheat oven to 375 degrees. Place a layer of parchment paper on a baking sheet.
Mix oil, tamari and nutritional yeast to form a paste. Toss over tofu and stir to coat evenly.
Layer on parchment paper, evenly spaced. Bake 15 minutes, then stir and bake another 15 minutes. the goal is a golden brown, slightly crispy tofu bite. When you pull out of the oven, lightly sprinkle with salt. Let cool slightly and serve with your favourite dipping sauce.
