This is an agrumato-style olive oil (i.e. made by crushing olives with whole rosemary leaves at time of harvest). Our Wild Rosemary Agrumato-Style Olive Oil is created when certified organic, peak freshness Chetoui Olives are crushed with organically-grown, (but not certified) rosemary. The agrumato technique relies on perfect timing: the simultaneous ripening of the herbs and the olives, the result is an oil that has all the complexity of fresh rosemary, and the double-wammy high levels of anti-oxidants from both the olives and the rosemary.
