Episode 2 Rocket Salad

Sunshine Coast Olive Oil Co. Basil Olive Oil

Sunshine Coast Olive Oil Co. Traditional 18yr Aged Dark Balsamic

 

Ingredients:

Arugula

2 Tsp  Sunshine Coast Olive Oil Co. Basil Olive Oil + 2 Tbs

1 Tbs Sunshine Coast Olive Oil Co. Balsamic

2 Tbs Yellow Mustard

2 Tbs Greek Honey

1 Tsp Salt

10 Grape Tomatoes

2 Radishes

1 Avocado

Handful of Walnuts

¼ White onion

 

Method:

Toast your walnuts in the oven. Mix Arugula with 2 tsp of Basil Olive Oil. To make dressing, mix 2 Tbs oil, balsamic, mustard, honey and salt. Pour dressing over the salad and top with grape tomatoes, radishes cut very thin, sliced avocado, white onion and walnuts.
