Episode 4 Beet Salad

2 C Arugula

2 Beets (grated)

¼ Apple (thinly sliced)

¼ Tsp Lemon Juice (Sprinkle on apples to prevent browning)

Handful of Chopped Walnuts

½ Goats Cheese

½ Tsp Salt

½ Tsp Pepper

3 Tsp Red Apple Balsamic (separated)

2 Tsp Basil Olive Oil



Sprinkle apple slices with lemon juice to prevent browning. In a medium sized bowl, marinade grated beets with 2 tsp of balsamic for 15 minutes. In a large salad bowl, add arugula, 1 tsp balsamic and 1 tsp of oil to a bowl and massage mixture with arugula. Add salt and pepper, mix gently. On top, add beets, 1 tsp of oil, apple slices (with lemon juice on them to prevent browning), goat cheese and walnuts.
