Potato Salad

Sunshine Coast Olive Oil Co. Grapefruit White Balsamic

Sunshine Coast Olive Oil Co. Fernleaf Dill Olive Oil

 

Ingredients:

2 lb Yukon Gold Potatoes

1 Tbs Chopped Shallot

2 Tsp Dijon Mustard

4 Tsp Sunshine Coast Olive Oil Co. White Grapefruit Balsamic

½ C Sunshine Coast Olive Oil Co. Fernleaf Dill Olive Oil

½ Tsp Salt

½ Tsp Pepper

¼ Red Pepper

¼ C Parsley

1 Clove Garlic

 

Method:

Dice and boil potatoes, then remove from water and cool. Mix together Dijon, balsamic, olive oil, salt and pepper. Pour on cooled potatoes and mix. Add red pepper, parsley, shallot and minced garlic. Mix and serve.
