Sunshine Coast Olive Oil Co. Traditional 18 year Aged Italian Dark Balsamic
Bocconcini cheese (unless you are lucky enough to have access to Buffalo Mozzarella)
Fresh tomatoes, sliced
Fresh sea salt
Layer the tomatoes, basil and cheese, lightly salting each tomato slice in the stack. Drizzle with Olive Oil and balsamic.
