Sunshine Coast Olive Oil Co. Chipotle Infused Olive Oil
Vancouver Island Salt Co. Smoked Sea Salt
1/3 cup Hellmann’s mayonnaise
3-4 teaspoons Sunshine Coast Olive Oil Co. Chipotle Infused Olive Oil
1/4 teaspoon Vancouver Island Salt Co. smoked Salt
Whisk together the above ingredients (the mayo will whisk together better in smaller amounts). Serve immediately.
The sandwich I chose is fresh roasted chicken (leftover of a roast chicken I rubbed under the skin with our Tuscan Herb Oil), avocado, yellow peppers and Yahoo! It’s Spring! lettuce from my garden.
This recipe also works beautifully with many of our oils (try lemon or lime on seafood, herbes de provence or milanese gremolata on chicken, harissa to add an East Indian flavour to your sandwich). Choose an appropriate salt from our collection, and you’ll have unending options.
