Episode 1 Lemon Chicken and Potatoes

Sunshine Coast Olive Oil Co. Lemon Olive Oil

 

Ingredients:

3 or 4 Chicken Legs (Thigh and Drumstick)

5 Russet Potatoes

3 Tbs Yellow Mustard

Juice from 1 ½ Lemons

1 Tbs Salt

1 Tsp Pepper

2 Tsp Dried Oregano

½ Tsp Curry Powder

¼ Cup Sunshine Coast Olive Oil Co. Lemon Olive Oil

1 Cup Water

1 Clove Garlic

 

Method:

Peel and cut potatoes into quarters. Put potatoes and chicken legs into your baking dish. Add lemon juice, mustard, salt, pepper, 1 tsp oregano, curry powder, olive oil and water. Mix together and bake at 420 for 45-60 minutes (until chicken has browned). Take out of the oven and flip the chicken. Add diced garlic, 1 tsp of oregano and more water if needed. Put back in the oven for 15 minutes. Take out of the oven and serve.
