Sunshine Coast Olive Oil Co. Oregano Olive Oil



6 Russet Potatoes

4 Zucchini

2 Tsp Salt + 1 Tsp

1 Tsp Pepper

½ Tsp Cinnamon

2 Tsp Oregano

2 ½ C Goat Cheese

1 Tbs Mint (finely chopped)

1 Clove Garlic

½ C  Sunshine Coast Olive Oil Co. Oregano Olive Oil + 2 tbs

2/3 C Milk

3 or 4 Tbs Flour

½ C Parmesan



Peel potatoes and slice very thin (on a mandolin if you have one). Leave the skin on your zucchini and slice very thin. Put potatoes and zucchini in separate bowls. Mix together 2 tsp salt, pepper, cinnamon and oregano, put half the mixture on the potatoes and half on the zucchini. Using half of your potatoes, put a layer of potatoes in the bottom of your pan, then with half of the zucchini put a layer on top. Add all the goat cheese on top of the zucchini and top with mint and garlic. Put another layer of potatoes on top of the goat cheese, and then finish with another layer of zucchini. Drizzle with ½ cup of Oregano Olive Oil. In a bowl, mix together milk, 2 tbs Oregano Oil, flour and 1 tsp salt to create a cream sauce and pour on top of the zucchini layer. Top with parmesan and bake for 45-50 minutes at 420.
