Any Sunshine Coast Olive Oil Co. Extra Virgin Olive Oil



½ C Olive Oil

1Kg Beef Tenderloin (cubed)

1 Red Onion (diced)

1 Tsp Salt

6 Bay Leaves

½ Tsp Cloves

1 Tsp Cumin

½ Tsp Pepper

½ C White Wine

1 Tsp Tomato Paste

½ C Beef Broth

½ C Tomato Sauce

16 Pearl Onions



Fill a large saucepan with water and boil beef for 30-40 minutes. Take the beef out of water and reserve the broth. In a large pot, heat olive oil. Add red onion to the hot oil and cook until translucent. Add cooked beef to the pot and stir. Add salt, bay leaves, cloves, cumin and pepper, stir and cook for 2 minutes. Add white wine and tomato sauce. In a small bowl, mix tomato paste with beef broth and add to the pot. Stir and then add the pearl onions. Cook for 20 minutes, adding more beef broth if needed. Remove from heat and serve.
