Needed for this Recipe:

Any Sunshine Coast Olive Oil Co. Extra Virgin Olive Oil

Sunshine Coast Olive Oil Co. Neapolitan Herb Dark Balsamic



3 Tbs Olive Oil

½ Tsp Cayenne Pepper Oil or 1 Tsp Chili Flakes

½ Red Onion (diced)

6 or 7 Sausages (cut into 3 or 4 pieced)

2 Tsp Salt

1 Tbs Neapolitan Herb Balsamic (or White Wine)

1 x Green, Red & Orange Pepper

¼ C Water

¼ C Crushed Tomatoes

2/3 C Feta (cubed)



In a pan, heat Olive Oil and Cayenne Pepper Oil (or chili flakes) add onion and sauté for about 3 minutes, then add sausage. Cook until the outsides of the sausage are browned, then add salt and balsamic (or wine). Cover and allow to simmer for 3-4 minutes. Add peppers and water, cover and cook for 10 minutes. Remove the lid and add crushed tomato, stir in, cover and cook for 5 minutes. Add feta, cover and let simmer for another 2 minutes. Remove from heat and serve
