Grain and Veggie Bowl with Elderberry Vinaigrette

If you chop your veggies while your grains are cooking, this is a quick and easy dish.

Sunshine Coast Olive Oil Co. Elderberry Dark Balsamic
Sunshine Coast Olive Oil Co. Garlic Olive Oil or your choice of  our Mild Extra Virgin Olive Oil, Lemon Olive Oil, Basil Olive Oil, Blood Orange Olive Oil, Persian Lime Olive Oil, Cilantro and Roasted Onion, Fernleaf Dill, Herbes de Provence Olive Oil

 

Ingredients:

Sunshine Coast Olive Oil Co. Elderberry Dark Balsamic
Sunshine Coast Olive Oil Co. Garlic Olive Oil or substitute (see above)
Pre-cooked grain of your choice: rice, quinoa, buckwheat etc…
Fresh raw veggies: in manageable sizes for your fork: such as avocado, cucumber, zoodles (zucchini noodles),
Fresh herbs with soft leaves –  such as basil, oregano, thyme, sage – torn or scissored into small pieces.

 

Recipe:

Mix equal parts oil and vinegar and set aside.

Grab a bowl and slot in your grains and veggies.  Use a tablespoon to place your grains on one side, then layer your vegetables in any way that appeals to you.  Reblend your oil and vinegar and drizzle 80% of it on the vegetables.  Do a thin drizzle of the remaining 20% on your grains.

Grab a fork and either start eating OR mix it all up and dive in!
