Needed for this recipe:
½ cup fresh orange juice
¼ teaspoon freshly ground pepper
¼ cup Sunshine Coast Olive Oil Co. Basil Infused Olive Oil
¼ teaspoon Sunshine Coast Olive Oil Co. Lime Sea Salt
¾ pound halibut fillets
Heat orange juice, salt and pepper, simmering the juice until it has reduced at least half. Whisk in basil oil.
Marinate halibut fillets 1 hour or overnight in basil/orange mixture.
Preheat broiler. Line an oven proof dish with parchment paper. Place fish on parchment paper-lined dish. Season lightly with salt and pepper.
Broiling time will vary depending on the thickness of the fillet: about 10 minutes per inch.
Broil fish for half estimated cooking time, then rebrush with marinade and broil until done.
