Salmon is a classic West Coast dish, and easy to grill or broil with a few simple ingredients.
Needed for this recipe:
1 pound fresh wild salmon fillet(s)
4 tablespoons Sunshine Coast Olive Oil Co. Wild Fernleaf Dill Olive Oil
2 tablespoons fresh squeezed lemon juice
1 tablespoon fresh flat leaf parsley to garnish
salt and fresh ground pepper to taste
Mix olive oil and lemon juice. Rub the salmon with this mixture. Season the salmon liberally with salt and fresh ground pepper. Grill or broil until cooked.
Guidelines for broiling salmon: 425 degrees, broiled 4-6 minutes for every half inch thickness of the filet.
