Needed for this recipe:
2 zucchini, trimmed at the ends and cut lengthwise in quarters
2 Tablespoons Sunshine Coast Olive Oil Co. Robust Extra Virgin Olive Oil
¼ cup grated parmesan cheese
1/2 teaspoon Italian herbs
1/4 teaspoon sea salt. Check out our salts.
Heat oven to 350 degrees.
Brush oil along each zucchini piece. Spend them on a cooling rack over an oven proof cookie sheet.
Sprinkle zucchini with herbs, salt and cheese.
Bake 20 minutes. Larger zucchini may need an additional 15 minutes to brown and crisp up.
