A delicious summer treat to beat the heat!
Needed for this recipe:
2 cups fresh whole kiwis, washed and sliced thinly
1 teaspoon grated lemon zest
2 tablespoons Sunshine Coast Olive Oil Co. Lemon Olive Oil (Agrumato style)
1 cup whole milk yogurt
½ cup honey
Place 12 thin slices of kiwi aside. Place the rest of the kiwis in a medium sauce pan over medium heat along with 2 tablespoons of water, the lemon zest, and honey. Simmer for approximately 2 minutes. Allow the mixture to cool slightly, and then add the yogurt and olive oil, whisking until blended. While the mixture is cooling, place a single slice of kiwi on the edge of each popsicle mold. When the mixture is at room temperature, portion into 12 popsicle molds and freeze.
