Needed for this recipe:
1 eggplant, sliced thin on a chef’s mandolin
2-3 Tablespoons of Sunshine Coast Olive Oil Co. Herbes de Provence Infused Olive Oil
1 Tablesoon of Sunshine Coast Olive Oil Co. Herbes de Provence Infused Olive Oil
Lay sliced eggplant on a rack and sprinkle lightly with salt. Let ‘sweat’ for 30 minutes. Pat dry.
Heat your grill to medium-high.
Put olive oil in an oil sprayer and spray both sides of the eggplant. Place on grill. Grill approximately 3 minutes, until gridiron marks show on the eggplant. Flip over and grill the other side.
