Moira’s Marinated Fruit Salad with Maple Cream

My sister came up with this recipe, and it is DELISH!!!

 

Sunshine Coast Olive Oil Company Ingredients:

• 1 Tbsp. Sunshine Coast Aged Blackberry Ginger Dark Balsamic Vinegar

• 1 Tbsp. Sunshine Coast Aged Wild Blueberry Dark Balsamic Vinegar

• 1 Tbsp. Sunshine Coast Aged Black Cherry Dark Balsamic Vinegar

• 1 Tbsp. Sunshine Coast Grapefruit Aged White Balsamic Vinegar

• 1 Tbsp. Sunshine Coast Aged Tangerine Dark Balsamic Vinegar

• 1 Tbsp. Sunshine Coast Peach Aged White Balsamic Vinegar

• 1 Tbsp. Sunshine Coast Aged Raspberry Dark Balsamic Vinegar

• 1 Tbsp. Sunshine Coast Aged Strawberry Dark Balsamic Vinegar

• 1 Tbsp. Chipotle Infused Olive Oil

 

Other Ingredients:

• ½ Cup Fresh Blackberries

• ½ Cup Fresh Blueberries

• ½ Cup Canned Unsweetened Cherries (drained)

• ½ Cup Fresh Pink Grapefruit Segments

• ½ Cup Canned Mandarin Orange Segments in fruit juice (drained)

• ½ Cup Fresh Nectarines (pit removed and cut into pieces)

• ½ Cup Fresh Raspberries

• ½ Cup Fresh Strawberries (hulled and cut into pieces)

• ½ Cup Fresh Watermelon Balls

• 1 Cup Fat Free Plain Greek Yogurt

• 4 Tbsp. Pure Maple Syrup

 

In Separate Sealed Containers:

Marinate ½ Cup Fresh Blackberries in 1 Tbsp. Sunshine Coast Aged Blackberry Ginger Balsamic Vinegar

Marinate ½ Cup Fresh Blueberries in 1 Tbsp. Sunshine Coast Aged Wild Blueberry Dark Balsamic Vinegar

Marinate ½ Cup Canned Cherries in 1 Tbsp. Sunshine Coast Aged Black Cherry Dark Balsamic Vinegar

Marinate ½ Cup Fresh Pink Grapefruit Segments in 1 Tbsp. Sunshine Coast Aged Grapefruit White Balsamic Vinegar

Marinate ½ Cup Canned Mandarin Orange Segments in 1 Tbsp. Sunshine Coast Aged Tangerine Dark Balsamic Vinegar

Marinate ½ Cup Fresh Nectarines (pitted and chopped) in 1 Tbsp. Sunshine Coast Aged Peach White Balsamic Vinegar

Marinate ½ Cup Fresh Raspberries in 1 Tbsp. Sunshine Coast Aged Raspberry Dark Balsamic Vinegar

Marinate ½ Cup Fresh Strawberries (hulled and sliced) in 1 Tbsp. Sunshine Coast Aged Strawberry Dark Balsamic Vinegar

Marinate ½ Cup Fresh Watermelon Balls in 1 Tbsp. Chipotle Infused Olive Oil

Marinate Fruits for a minimum of 24 hours.

 

When ready to serve:

Drain Fruits and gently blend together, retaining the shape of the fruits.

Divide the fruit salad mixture into 4 bowls.

Mix the Fat Free Plaint Greek Yogurt with Maple Syrup

Place a ¼ cup dollop of the Maple Yogurt Mixture on top of the fruit salad.

 

Serve immediately.
