Matt’s Coconut-Lime Fish Tacos

Sunshine Coast Olive Oil Co. Coconut White Balsamic

 

Ingredients and Directions:

Marinate a fillet of halibut for 1 hr. in 2 Tbs. of Persian Lime Oil and 2 Tbs. of Coconut Balsamic.

Sauté 1 chopped onion for 1-2 minutes, until translucent (in a little Persian Lime olive oil _at medium heat.  Add fish, breaking apart the fish as it cooks.  Add the marinade liquid and turn the heat down, then cook with ¼ tsp. cumin, ½ cup chopped, sweet spicy peppers, like Peppadews or Sweetie drops.

Add 1 tsp. each of oil and balsamic.

Wrap in a burrito shell.

Garnish with cilantro and tomatoes.
