Zucchini Muffins

Sunshine Coast Olive Oil Co. UP-certified Extra Virgin Olive Oil
Ingredients:
1/2 cup milk
2 eggs
2 Tablespoons Tahitian Vanilla Balsamic
1 cup UP-certified Extra Virgin Olive Oil
3 cups grated zucchini
3/4 cup brown sugar
3 cups flour
1 1/2 tsp cinnamon
1 tsp baking soda
1 1/2 tsp baking powder
pinch of nutmeg
pinch of salt.
Preheat oven to 350. Mix together: milk, eggs, Tahitian Vanilla Balsamic, UP-certified Extra Virgin Olive Oil, grated zucchini. In a separate bowl mix: brown sugar, flour, cinnamon, baking soda, baking powder, nutmeg, salt. Gently mix wet and dry ingredients. Bake at 350 for 25 min.
