Needed for this recipe:

1 medium zucchini, sliced into thin discs (use a mandolin cutter if you have one)
1½ Tablespoons Sunshine Coast Olive Oil Co. Chipotle Olive Oil*
¼ Bread crumbs
1½ teaspoons Flavors of the Med Tuscan Bread Dipping Spice
¼ teaspoon sea salt

Place about 1 Tablespoon of the Chipotle Olive Oil in a bowl.
Blend the bread crumbs, spice and salt in a separate bowl.
Place some of the sliced zucchini in bowl with the oil, stir until coated, then pour some bread crumbs mixture over them. Add more zucchini, toss again, add some more bread crumbs; toss until all are coated.
Pour some more olive oil into fry pan, about 1 teaspoon. Heat the pan. Add zucchini and heat them until the bread crumbs brown. The longer you cook the zucchini, the softer they get, so stop when they are the texture you want.
