Our Balsamic Vinegars are artisan products produced with love, care and tradition in Modena, Italy. Our Traditional <18 yr. Aged Dark Balsamic is made by placing the grapes in copper kettles, and gently caramelizing them over an open fire. Then they are aged in wooden casks for up to 18 years using a technique known as the Solera method. As the balsamic evaporates and reduces in size, it is moved to progressively smaller and smaller casks. Over time the balsamic vinegar draws out the flavours of the various wooden casks:oak,ash,, mulberry etc..and mellows into a deliciously sweet and savoury balsamic.
Our Aged White Balsamic also uses the Solera method, but the grapes are sundrein before they are put in the casks. They are aged up to 12 years in wooden casks.
Our flavoured Aged Balsamics, both White and Dark, are made using these very balsamic vinegars as the base, then infused with 100% natural, organic flavour.
