Ingredients:

• 1 teaspoon Sunshine Coast Olive Oil Co. Roasted Onion and Cilantro Olive Oil
• 1 cup of a mix of fresh peppers: red, yellow, green and/orange, sliced thinly
• 1 cup of snow peas
• 1 cup left over turkey (you can substitute with cooked shrimp, chicken or tofu)

Peanut Sauce:
• 1 cup smooth, unsweetened peanut butter
• 2 cups chicken or vegetable broth
• 1 teaspoon. each:

dried cumin
• Optional: ½ teaspoon cornstarch

Instructions:

Blend peanut sauce ingredients and set aside.
Heat 1teaspoon Onion and Cilantro Oil in a fry pan. Stir fry snow peas 1-2 minutes, add peppers and stir fry 1-2 more minutes. Add cooked meat and stir fry 1 more minute.

Add peanut sauce and simmer until thickened, about 1 minute.
