Under Napoleon, the Isle of Capri was briefly occupied by the French in the 1800s. This recipe is a variation on the classic Italian recipe, using flavours reminiscent of Provence. If you can get real Mozzarella di Bufalo, you won’t regret it. Mozzarella di Bufalo is usually available at Plethore Fine Foods.
Needed for this recipe:
Fresh soft Mozzarella (preferably buffalo mozzarella)
Sunshine Coast Olive Oil Co. Aged Lavender Dark Balsamic
Sunshine Coast Olive Oil Co. Herbes de Provence Infused Olive Oil
Chop basil. Slice tomatoes and cheese. Layer the three ingredients as per photo.
Blend 1 Tablespoon each of oil and vinegar and drizzle over salad.
