Prosciutto Wrapped Figs with Persian Lime Goat Cheese and Lavender Balsamic Reduction

Floral and savoury, the oil and vinegar add a  burst of summer citrus and floral flavour to this dish.  Serve with Lavender Champagne

Sunshine Coast Olive Oil Co. Aged Lavender Dark Balsamic

Ingredients:

1 ½ Tablespoons Sunshine Coast Olive Oil Co. Persian Lime Olive Oil
1/3 cup Sunshine Coast Olive Oil Co. Aged Lavender Dark Balsamic
½ cup soft goat’s cheese
fresh figs, destemmed and sliced in ½
slices of procciutto
Fresh sprigs of rosemary or other herbs for garnish

Recipe:

Make a balsamic reduction with the Lavender Balsamic.  Detailed recipe here:

 

Blend goat cheese and Persian Lime olive Oil.  Refrigerate 30 minutes.

 

To assemble: Place a dollop of lime infused goat cheese on top of each fig half. Wrap each fig piece in prosciutto.

To serve: drizzle plate with Lavender Balsamic reduction and place wrapped figs on top. Garnish with sprigs of rosemary
