Chicken Caesar Salad with Chipotle Chicken

Sunshine Coast Olive Oil Co. UP-Certified Extra Virgin Olive Oil (I prefer a grassy oil, such as a Picual or Hojiblanca, or a peppery Coratina)

Metropolitan Chef Beer Can Chicken Rub

Caesar Salad Ingredients:

1 coddled egg
1 teaspoon Sunshine Coast Olive  Oil Co. Sicilian Lemon White Balsamic
1 teaspoon Dijon mustard
2 cloves garlic, minced or grated on a zester
1 teaspoon Sunshine Coast Olive Oil Co. Neapolitan Herb Dark Balsamic
1 Tablespoon fresh lemon juice
zest from 1/2 a lemon
1/3 cup freshly grated parmesan cheese
1/2 cup Sunshine Coast Olive Oil Co. Extra Virgin Olive Oil
1 head romaine lettuce, washed, dried and torn into bite-sized pieces

 

Chipotle Chicken Ingredients:

1 chicken breast, cut into stir fry strips.
1 Tablespoon  Sunshine Coast Olive Oil Co. Chipotle Olive Oil
1/2 teaspoon Metropolitan Chef Beer Can Chicken Rub

Directions:

Mix first 9 ingredients in a blender and refrigerate while you saute’ the chicken in Chipotle Olive Oil and Beer Can Chicken Rub.

Toss the lettuce with the dressing, then top with hot chicken.  Garnish with more Parmesan cheese, if desired
