Wash your peaches and pat them dry. Slice pieces into wedges and gently pull them off the stone pit.
Preheat your grill to medium.
Brush peach slices with dairy-free butter olive oil, and grill them until they have light to medium grill marks on each side.
Layer your ingredients as follow, starting from the bottom:
2) grilled peaches
4) pine nuts
5) balsamic. Drizzle the balsamic straight out of the bottle, or for a more beautiful presentation, reduce the balsamic first.
