Needed for this recipe:
• 750 ml of cold sparkling water (we use a soda stream and our local award-winning Gibsons water)
• 2-3 teaspoons Sunshine Coast Olive Oil Co. Cascadian Wild Raspberry Aged White Balsamic (adjust amount depending on how minerally your sparkling water is)
• ½ cup fresh strawberries
• a few slices of fresh lime, thinly sliced on a mandolin, seeds removed.
• fresh mint for garnish
Rinse strawberries and lime. Place ½ the water and ¼ cup of strawberries in the blender, and blend until smooth. Optional: run through a fine sieve to remove any seeds.
Slice ¼ cup of strawberries on a mandolin and place in a sealed 1 litre bottle with the lime slices and blended sparkling water. Stir in balsamic vinegar.
Refrigerate ½ and hour to let the flavours infuse.
When serving, place infused sparkling water mixture in your serving jug, and top up with remaining fizzy water. Sample and add more Cascadian Wild Raspberry Balsamic Vinegar to taste.
