Deep Fried Olives (with air fryer option)
Needed for this recipe:
Sunshine Coast Olive Oil Robust Ultra Premium Olive Oil (enough to immerse the olives). After deep frying you can save the oil for another fry, or to cook other vegetables in during your regular cooking.

Ingredients

Pitted or stuffed olives from our collection
An infused salt that such as smoked or garlic from our collection.
¾ cup all-purpose flour
½ teaspoon of an infused salt from our collection, such as garlic salt.
2 beaten eggs
¾ cup fine bread crumbs, or if you wat to go less traditional, panko bread crumbs.
½ tsp. freshly ground pepper
Method:
Heat a fresh, robust, ultra-high phenol (i.e. heat stable) olive oil to 350 degrees.
Before frying the olives, drain them well and pat them dry.
Ideally you set up an assembly line with three bowls: Eggs in one, flour mixture in another and bread crumbs in a third.
Beat the eggs in bowl 1.
Mix flour, salt, pepper in bowl 2.. You can also add spices or one of our infused salts.
Roll each olive in flour, then egg, then in the bread crumbs in bowl 3. Set each olive aside on a plate as you roll the others and as the oil heats up. This lets the flour dry off.
When the oil has reached the correct temperature, fry the coated olives in small batches. Be careful not to drop them in (you can burn yourself). Remove them from the oil when they are golden brown. A slotted spoon is helpful.
Rest the fried olives on a drying rack placed above paper towel to catch the drisps (not on the paper towel or the olives will become greasy) and when they are cool enough to touch, drain out any oil that may have gotten into the center of the olive.
Serve warm with an olive oil infused mayo
Air Fryer Option:
Spray our olive oil on the coated olives prior to putting in the air fryer, then follow your manufacturer’s directions.
