Blood Orange and Maple Green Salad with Roasted Chicken and Beets

 Needed for this recipe:

• Sunshine Coast Olive Oil Co. Maple Aged Dark Balsamic

• Sunshine Coast Olive Oil Co. Blood Orange Olive Oil

 

 Ingredients:

• ½ cup of organic baby spinach leaves or other greens in season

• 3 pickled beets

•Other items such as:  ¼ avocado, sliced, 1 carrot, grated, 4 cherry tomatoes, cut in ½, 1 orange cut up, crumbed soft cheese such as goat cheese

• Roasted chicken (I used leftovers from the Tuscan Herb chicken we posted Sept. 30th)

• 1 Tablespoon Sunshine Coast Olive Oil Co. Maple Aged Dark Balsamic

• 1 Tablespoon Sunshine Coast Olive Oil Co. Blood Orange Olive Oil

 

 Recipe:

 

Toss all ingredients except chicken and drizzle with Blood Orange Olive Oil and Maple Balsamic. Top with roasted chicken pieces. Hide on the back stairs so you don’t have to share.
