Sturgeon Al Cartoccio
The world’s only organic, Oceanwise sturgeon is raised on the Sunshine Coast. Sturgeon is a very strong flavoured fish, so flavoured olive oils complement it. Wrapping in a parchment paper parcel, then baking in the oven is known as ‘en papillotte’ or ‘al cartoccio’

Recipe:
Rub your choice of olive oils over the fish and marinade in the fridge for 6 hours or overnight.
When ready to cook, brush a piece of parchment paper with oil, then lay the fish (deskinned) on the oiled parchment paper. Drizzle with your choice of oils.
Wrap the parchment by meeting the edges, and folding them into the fish, then flip the paper and tuck the edges underneath. Make sure the parcel is well sealed, without any openings.
Bake at 400 degrees for 10-12 minutes per lb. of fish
Finish with a flavoured salt, such as Vancouver Island Lime and Orange Sea Salt, or a Metropolitan Chef Rub.
